1/2 cup anato oil*
2 1/2 tbsp garlic, chopped
3/4 cup red onions, chopped
3 tbsp tomatoes, chopped and seeded
1/2 cup red bell peppers, chopped
1/2 kilo MAGNOLIA chicken pulutan mix or fresh chicken
150g chopped MAGNOLIA chicken liver
2 red chili peppers, chopped and seeded
1/3 cup PUREFOODS vinegar
1 1/4 tsp salt
3/4 tsp ground black pepper
1/2 tsp sugar
Saute garlic, onions and tomato in anato oil over low-medium heat. Add bell peppers and cook.
Add pulutan mix, liver and chili peppers. Cook for 2-3 min. Stir in vinegar and season with salt, pepper and sugar. Simmer over low heat for 5 more min
5-6 servings
*To make 1/2 cup anato oil or atsuete oil, heat a pan with 1/2 cup coconut oil until it's smoking. Turn off the heat and add 1 tbsp of achuete seeds. Let stand until oil turns orange in color.
