Spinach and Crispy Wanton Salad with Hoisin Dressing recipe

1 cup spinach, blanced
1 boiled egg, grated
1 tomato seeded and diced
4 shiitake mushrooms, julienned (optional)
1 medium red onion, thnly sliced
1 tbsp garlic, minced then fried
10 wantons, quartered then deep fried

Dressing:
4 shallots, chopped
2 cloves garlic, minced
3 tbsp Lee Kum Kee Hoisin Sauce
1/3 cup vinegar
1 1/4 cup oil
2 tbsp sesame oil

In a bowl, combine shallots, garlic, hoisin sauce and vinegar.
Gradually add in the oil and sesame oil into the mixture while whisking continually until a thicker consistency is achieved. Season w/ salt and pepper. Adjust consistency w/ water if dressing is too thick.
Mix the spinach, egg, tomato, mushrooms and onion in a bowl. Toss w/ dressing and top w/ crispy wantons and toasted garlic.
