1.7 kg lean ground pork
1 pouch Del Monte Original Style Tomato Sauce (250g)
6-1/2 tbsp Del Monte Red Cane Vinegar
1 cup sugar
1-1/2 tsp pepper
3-1/2 tsp fine salt (or 3 1/2 tbsp rock salt)
1/2 cup all-purpose flour
18 cloves garlic, crushed
4 tsp hot sauce
3 tbsp soy sauce
Mix all ingredients well. Refrigerate for at least 2 hours to blend flavors and ensure meat will hold shape. Place every 2 tbsp of mixture on wax paper or clear plastic. Roll to form longganisa shape. Remove paper or plastic and shallow fry desired number of pieces in hot oil until brown. Store the rest in freezer.
Makes 25 servings
Longganisa will last for about one month when stored in the freezer.
