1/2 cup LADY'S CHOICE sandwich spread
1 cup cooked chicken adobo (salty and sour/vinegar chicken or marinated chicken), flaked
3 quail eggs, chopped
1 1/2 tbsp tomato catsup
2 tsp fresh celery stalks, chopped
1/4 to 1/2 tsp chili sauce
1/8 tsp garlic, minced
salt and pepper
1. Stir fry chicken in a slightly oiled pan. Set aside and let cool
2. In a bowl, mix sandwich spread and tomato catsup
3. Gradually add quail eggs, celery, chili sauce and garlic
4. Add chicken. Mix well
5. Season with salt and pepper
10 sandwiches
Steps 2 and 3 also result in a delicious Thousand Island Dressing recipe to make your salads truly home-made. It can also be used as base for other wonderful sandwich fillings.
Leftover fried chicken or "lechon manok" may be used as an alternative to chicken adobo
