Chicken ala Pizzaiolla recipe

4 pcs chicken breast fillet
1/2 tsp garlic, finely chopped
1/2 tsp oregano
1/4 tsp salt
1/4 tsp pepper
1/4 cup flour
1/4 cup butter
2 tbsp olive oil
1 pc onion, chopped
1/4 cup red bell pepper, thinly sliced
1 pack hunt's spaghetti sauce parmesan cheese 250g
1/4 cup black olives, sliced
1/4 cup green olives, sliced
2 cloves garlic, thinly sliced (for topping)
2/3 cup cheddar cheese, grated

Place 4 fillets in a chopping board then cover with cling wrap. Pound chicken until flat
Season fillets with garlic, oregano, salt, pepper. Pat in flour then cook chicken in butter
On another pan, saute onions and bell peppers in oil
Arrange fillets on a plate then top with spaghetti sauce, olives and sauteed onions and bell peppers. Top with garlic and cheese.
Bake in an oven or oven toaster until cheese melts

Makes 4-5 servings
