3 cups flour
1 tsp. baking soda
½ tsp. iodized salt
¾ cup butter, slightly softened
1-1/2 cups brown sugar, packed
1 tsp. vanilla
1 egg
1 can (439g) Del Monte Fiesta Fruit Cocktail, drained (reserve 2 tbsp. syrup)
¼ cup roasted cashew nuts, coarsely chopped
Pre-heat oven to 350f. Sift together first 3 ingredients. Set aside. Cream together butter and sugar until fluffy. Add fruit cocktail syrup and vanilla. Beat in egg then dry ingredients. Mix in fruit cocktail and cashew nuts.
Drop a tablespoon of batter on greased cookie sheet 2” apart. Bake for 20 minutes. For crispier cookies, turn to bake other side for another 15 minutes.
